- 400 ml leche coco
- 1 litro caldo de verduras
- 4 dientes ajo
- 1 cebolla

- Mientras, preparar la mezcla de especias en un vasito: jengibre, cúrcuma, comino, curry, garam masala, canela, pimienta y sal.
- Cuando la cebolla ya esté pochada, añadir la mezcla de especias a la cazuela y saltear muy brevemente removiendo de forma continua (es importante que las especias no se quemen). Con un minuto puede ser suficiente.
- Añadir enseguida el caldo de verduras y luego las lentejas bien escurridas y el tomate tamizado. Remover y llevar a ebullición.
- Tapar la cazuela y cocinar a fuego medio durante unos 15 minutos, o hasta que las lentejas queden con el punto deseado. El guiso debe adquirir una textura espesa y cremosa. Si viéramos que ya se ha quedado sin líquido pero aún le falta cocción a las lentejas, se puede añadir un poco más de agua o caldo.
- Añadir la leche de coco y el zumo de limón y remover muy bien
- Para terminar, añadir el cilantro fresco picado y remover.
- Servir acompañando con arroz cocido o algún pan indio
