  2. sal
  3. 1/2 bote hummus de garbanzo (comprado o casero)

  9. 3-4 hojas melisa

  1. Lavar (pelar si no es ECO) y cortar en tiras muy final el calabacín. Lo ideal es hacerlo con una mandolina, pero con un pelador podría valer.
  2. Poner en una fuente las tiras de calabacín y salarlas por los dos lados a medida que se van colocando.
  3. Prensar el calabacín durante al menos 1h y 30 minutos para que suelten el agua. Esto consiste en poner peso encima de las tiras de forma uniforme (una bandeja más pequeña con botes, cajas de leche... encima)
  4. CREMA DE ZANAHORIA: La noche anterior, poner a remojo las avellanas para que se ablanden y activen
  5. Lavar (pelar si no es ECO) y cortar en trozos pequeños la zanahoria.
  6. Poner una cazuela con agua, llevar a ebullición y agregar la zanahoria. Dejar cocinar hasta que la zanahoria esté blanda (pinchar para comprobar)
  7. Escurrir la zanahoria y las avellanas y verterlos en un recipiente para batir.
  8. Con una batidora, ir triturando y agregando poco a poco los demás ingredientes (ajo, limón sin piel, romero y melisa) la crema debe quedar un tanto espesa (tipo papilla)
  9. Enrollar uno a uno los rulos, poniendo la crema o hummus en la parte central de la tira de calabacín. NO poner relleno en el extremo final, para que con esa punta se pueda pegar el extremo del rulo.
  10. Emplatar, y ¡A disfrutar!
